Fate Vegetable Pakoras

Fate vegetable Pakoras are easy to make. Serve them as a snack, or as part of a meal. Pakoras are also great eaten cold, perfect for a lunch box or picnic. You can grill, deep fry or shallow fry them. They can be as mild or as spicy as you like, just vary the amount of fresh chilli and curry powder. This recipe makes about 12. They freeze well. They can be reheated in the oven or microwave.


INGREDIENTS

50g onion, finely chopped

75g carrot, grated 75g sweet potato, grated 1-2 tbsp fresh chopped coriander 3 tsp Rogan Josh or Madras curry powder

1 tsp chopped fresh chillies (optional) salt and pepper to season 100g Fate Low Protein All Purpose Mix

20ml water oil for cooking


Place the onion, carrot and sweet potato into a mixing bowl. Add the coriander, curry powder and chillies. Season with salt and pepper. Stir well.


Stir in the Fate Low Protein All Purpose Mix, so that the vegetables are thoroughly coated. Add the water and use a large metal spoon to blend well. It will look like a stiff paste.


Take a large teaspoonful of the mixture and flatten it slightly. Do not smooth the mixture, it is best if they remain rough around the edges.








It’s a good idea to cook the first one as a test. Either shallow fry, deep fry, or grill brushed with a little oil, turning over once or twice to cook evenly. When golden brown and cooked through, taste to see if the flavour is right. You can then add more seasoning to the mixture if needed. Shape and cook the remaining mixture. Serve hot or cold.
