Fate Jam Tarts

This low protein version of the classic sweet treat is easy to make. You can use any flavour of suitable jam, marmalade or curd. Fate Jam Tarts freeze well.


INGREDIENTS

250g Fate All Purpose Mix

pinch salt 125g block margarine

50ml water

30g caster sugar little extra All Purpose Mix to roll out

suitable jam, marmalade or curd (approx ½ - 1 tsp per tartlet)



Preheat oven Gas 7 220 ̊C 425 ̊F

Place the Fate All Purpose Mix into a mixing bowl and stir in the salt. Rub in the margarine until the mixture resembles fine breadcrumbs, then continue until it resembles coarse breadcrumbs.


In a separate bowl, add the water and stir in the sugar. Add this to the rubbed in mixture. Mix quickly with a metal spoon until smooth. Do not worry if you think it is very soft, just leave it to rest for a couple of minutes.





Lightly dust the work surface with a little extra Fate All Purpose Mix and knead the pastry for a couple of minutes until it is smooth.







Dust the work surface lightly with Fate Low Protein All Purpose Mix. Roll out the pastry and cut it out using a cutter about 75mm in diameter. Place the cut out circles into a patty tin. Add a little of your chosen jam, marmalade or curd to each one.




If you like you can cut out little pastry shapes, such as hearts and pop them on top as decoration.








Bake in the preheated oven for 10-15mins. Remove to a wire rack to cool.
