Jackfruit Nachos are easy and quick to make. Use your favourite taco seasoning in the recipe. If you use one that you haven’t used before, add just a little at a time and taste as you go. This is best because they vary a lot and some can be very spicy, so be warned!! This recipe makes about 3 portions. They are good hot or cold and perfect for a party!
INGREDIENTS
For the jackfruit topping:
1 tbsp oil
150g onion, chopped
150g peppers, chopped
150g mushrooms, chopped
1 tin jackfruit, (about 565g) in water or brine
taco seasoning, to taste
To serve: (amounts to taste)
avocado, or a suitable guacamole
fresh lime for squeezing
tomato, chopped
red onion, chopped
suitable low protein cheese, grated
jalapeno pepper, sliced
If the jackfruit contains salt, place it in a sieve and rinse with cold water. Drain well and pull the pieces apart slightly.
Heat a pan and add the oil. Put in the onions. Stir and leave to cook for 5 minutes till lightly brown. Stir in the peppers and mushrooms and cook for 5-10 minutes till softened. Keep the heat up high to evaporate any moisture that will come from the mushrooms.
Stir in the jackfruit and Taco seasoning to taste. Cook for another 5 minutes until everything is blended and hot. If the mixture seems a little dry, you can add a couple of tablespoons of water at the end.
Serve with Fate Tortilla Chips, a little tomato and onion, guacamole/avocado, a squeeze of lime and a little grated suitable low protein cheese. You can also add a few slices of jalapeño pepper if you’re brave!
