Fate Bruschetta

Good bread (lightly toasted), ripe, fresh tasty tomatoes, a touch of garlic and a drizzle of good olive oil ~ all you need to make the perfect lunch or starter. Serve it with a little salad and a few green olives


For the bruschetta: 1-2 ripe fresh tomatoes salt and pepper to season 1 clove garlic 1-2 slices of Fate bread (Fate Continental Style Loaf is best) drizzle of olive oil (extra virgin is tastiest) To serve:

Cut the tomatoes in half, and grate the flesh into a dish. Do this by holding the tomato cut side to the grater, and grating until only the skin remains. Discard the skin, and then season the grated flesh with salt and pepper.

Peel the garlic. Toast the bread until golden. Take a garlic clove and rub the garlic all over one side of the toast. Drizzle a little olive oil over the toast. Spoon on the tomato.

Serve with a little salad and a few olives.
